"Meatout Special" for Sunday, 3/20: Brunch and Dinner

Today, it was 72 and sunny, so I haven't been scheming, planning, and creating, as I had anticipated in preparation for a day like Sunday -- National "Meatout" (see the Perpend Daily section of this blog).  I promised you an overview of what we would be eating on Meatout Day; instead of the new, we've returned to some favorites.

For Brunch:

Check out this post.  The hub loves sandwiches, particularly the breakfast variety; thus, I'm planning to do a variation on this sandwich with butternut steaks instead of tofu and oatmeal bread (see recipe) instead of the sweet potato rolls.  We'll also have rosemary and garlic mixed potato homefries (recipe posted in various other entries on the blog), and either a fruit salad or fruit muddled beverage.

For Dinner:

So many ideas...but the hub enthusiastically requested the VwV Pad Thai (as posted here on another blog).  Can't turn down such a heartfelt request for "Meatout" now can I?  That dish alone will be a complete meal, but we'll also be making strawberry ice cream with our frozen summer-picked strawberries that we've been saving for a special occasion and coconut milk (using standard manufacturer instructions).
