Bed Ostrich and Tortilla Soup via Nursery Game

Today, I should have been a bed ostrich and buried my head in the covers.

Let's just say that buying the ripped bag of flour,  burning the bagel, and tracking dog poop on the freshly cleaned carpet...twice... were the lesser of the day's annoyances.

On the plus side, my dad and Gma are here, and they brought unexpected (and consumable) presents -- happy!

So here's a "Fast Friday Fix" -- too bad we didn't get to eat it (due to the worst of the annoyances), but yay me for having a rocking stash of eats in the freezer, like black bean-sweet potato burgers, chunky broccoli soup, and especially Gma's PB Pie (which earned high praise from Gma herself!).  Did I mention that in addition to the pie, as pictured/reciped on a previous post, I made Chocolate Peanut Butter Sandwich Pies coated with Chocolate Ganache?  Want to visit me too?

Tortilla Soup via Veganized Nursery Game

Ingredients
2 c. refried beans
1 c. chunky medium salsa
2 c. frozen corn
2-3 c. black, red, or aduki beans
2.   veg. broth

Directions: Put a soup pot on the stove -- heat at medium.  Arrange those jars, cans, etc. in a circle if you like, or however, you please. Ready...set...OPEN!

Dump...Dump...Dump...Dump...STIR! (around the circle -- the let the goodness simmer in wait!)

Simmer to thicken to your liking for about an hour; top with diced avocado, green onions, a dab of vegan sour cream, and crushed tortilla chips.

For speed, the idea is to use veg. prepared beans and broth; however, if you have the time, homemade only adds to the flavor (depending particularly on how you season your refried beans).  Hm...might be a great use for frozen cooked beans for those of you who do that.

I leave you with this thought/inquiry:  I've focused thus far on posting some fairly quick recipes just to get you started making some vegan meals, if you haven't prepared them before.  As I continue, I'll be writing more about being a vegan, particularly a new vegan.  If you have any questions and thoughts on what you'd like me to discuss, I encourage you to share these in the comments.
